ginger and mixed spice snowman muffins

fun little snowmen and a festive muffins


ingredients:
[this recipe makes two muffins]
5 tbsp plain flour
1 tsp baking powder
3 tbsp oats
1 tsp mixed spice
2 tbsps melted butter
2 tsp chopped ginger
2 tbsps milk
1 tsp vanilla extract
white chocolate chips

for the topping:
4 marshmallows 
white chocolate spread 
diamond gummy sweets 
quark 
mixed spice
chocolate spread


preheat the oven to 167°C 
get two bowls, in one bowl sieve and mix the dry ingredients but leaving the chocolate chips for later. in the other bowl mix the wet ingredients. add the wet ingredients to the dry ingredients and mix together. place the mixture in two muffin cases, make a hole in the centre of each muffin and place a few chocolate chips in the centre. use the muffin mixture to cover the hole. place on the middle shelf of the oven for about 17 minutes. take out of the oven and leave to cool on a wire rack. once they have cooled enough to add a topping, get the remaining ingredients. 

to make the snowman get to marshmallows and skewer with a cocktail stick to hold them together but leave part of it sticking out the bottom. then I used an orange gummy sweet and cut it in half and placed it like and carrot nose. I then use some chocolate spread for the eyes and mouth, yay a little snowman. place the snowmen to one side for a moment.

place some white chocolate spread in a bowl and add an equal amount of quark and a pinch of mixed spice and mix then place on top of each muffin like snow. then place a snowman on top, yasss
