chocolate fudge cake as a muffin
[this recipe makes two muffins]
6 1/2 tbsp plain flour
1 tsp baking powder
1 1/2 tbsp cocoa powder
2 tsp sugar
2 tbsps melted butter
2 tbsps milk
1 tsp vanilla extract
for the filling and topping:
chocolate spread
8 thumb sized fudge pieces
preheat the oven to 167°C
get two bowls, in one bowl sieve and mix the dry ingredients, in the other bowl mix the wet ingredients but leaving the chocolate spread for later. add the wet ingredients to the dry ingredients and mix together. place the mixture in two silicone muffin cases. place on the middle shelf of the oven for about 17 minutes. take out of the oven and leave to cool on a wire rack. once they have cooled slice each muffin into three pieces. melt four of fudge pieces in a bowl for a few seconds in the microwave and place on top of the bottom pieces of muffin, then place the middle piece of muffin on top and top with chocolate spread, place the last piece of muffin on top and add a bit of chocolate spread on the top. slice the remaining fudge pieces and place on top. yay little chocolate fudge cakes or chocolate fudge muffins, yum
