coconut flour tropical muffin

coconut and pineapple and white chocolate, yum

[this recipe makes two muffins]
4 tbsp plain flour
4 tbsp coconut flour
1 tsp baking powder
2 tbsps melted butter
3 tbsps water
1 tsp vanilla extract
1 tsp pineapple flavouring

for the topping:
jelly sweets 
white chocolate buttons 
white chocolate spread

preheat the oven to 167°C 
get two bowls, in one bowl sieve and mix the dry ingredients, in the other bowl mix the wet ingredients. add the wet ingredients to the dry ingredients and mix together. place the mixture in two muffin cases, on a tray. and place on the middle shelf of the oven for about 20 minutes. take out of the oven and leave to cool on a wire rack. 
once they have cooled enough to add a topping, get the remaining ingredients. using the chocolate spread to stick them, arrange the white chocolate buttons and some gummy sweets into tropical flowers, yay!
