chocolate bear muffin

chocolatey, quite healthy, marshmallowy, caramely, muffin

[this recipe makes two muffins]
6 1/2 tbsp plain flour
1 tsp baking powder
1 1/2 tbsp cacao powder
2 tbsps melted butter
2 tsp sugar
3 tbsps water
1 tsp vanilla extract

for the topping and insides:
mini marshmallows 
chocolate buttons 
fondant icing
chocolate spread

preheat the oven to 167°C 
take two rolos and stack them on top of each other, then lightly cover with chocolate spread, and do the same with two more rolos, lightly rap in clingfilm and place in the freezer, these will be used in the centre of each muffin. 
get two bowls, in one bowl sieve and mix the dry ingredients, in the other bowl mix the wet ingredients. add the wet ingredients to the dry ingredients and mix together. place 2/3 of the the mixture in two muffin cases, make a hole in the centre of each muffin, get the rolos from the freezer and place in centre of each muffin. use the rest of the muffin mixture to cover and top the muffins. place on the middle shelf of the oven for about 20 minutes. take out of the oven and leave to cool on a wire rack. 
once they have cooled enough to add a topping, get the remaining ingredients. for the eyes, take 4 mini marshmallows and with some black fondant icing place a little pupil on top of each marshmallow sticking them down using chocolate spread and this is also used to stick their eyes to the muffin. for the bear ears, take 4 chocolate buttons, two for each muffin and stick on using the chocolate spread. and for the nose using the chocolate spread, stick on a rolo.
