oats and pumpkin and white chocolate muffins

oats, pumpkin, white chocolate, yasss

[this recipe makes two muffins]
3 tbsp plain flour
1 tsp baking powder
4 tbsp instant oats
1 tbsp melted butter
1 tbsp pumpkin purée
3 tbsp water
1 tsp vanilla extract
white chocolate chips

for the topping:
white chocolate spread

preheat the oven to 167°C 
get two bowls, in one bowl sieve and mix the dry ingredients but leaving the chocolate chips for later. in the other bowl mix the wet ingredients. add the wet ingredients to the dry ingredients and mix together. place the mixture in two muffin cases, make a hole in the centre of each muffin and place a few chocolate chips in the centre. use the muffin mixture to cover the hole. place on the middle shelf of the oven for about 17 minutes. take out of the oven and leave to cool on a wire rack. once they have cooled enough to add a topping, get the remaining ingredients. place some chocolate spread on top of each muffin then add some sprinkles, and I added a little toffee apple, the recipe for little toffee apples is here. yay
