pumpkin cookie bars

pumpkin-y, cinnamon-y, oat-y, white chocolate-y, quite healthy and tasty tasty tasty 


I sometimes okay quite a lot of time spend a while thinking about what I could make to eat;
 I might look at recipes online or think about food I like or have at home, that I could tailor, or inspire me, to invent a recipe. I really like something snuggly and yummy and quite easy to accomplish.
It's now October and that means pumpkins yay, but rather than just looking at them and carving them at Halloween; they could be made into something delicious!




so these are pumpkin packed soft white chocolate chip cookie bars

recipe:

ingredients:
1 1/2 cups white flour 
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 cup rolled oats 
1/2 cup fruit sugar 
3/4 cup chocolate chips

1/2 cup melted butter
1/2 cup pureed pumpkin 
2 1/4 tsp pure vanilla extract 
3 tbsp pure agave nectar
milk if needed

pre-heat the oven to 160°C, 
grease the sides of an 8 inch baking tray and line the bottom with baking paper,
in one bowl mix together the dry ingredients, then in another bowl mix together the wet ingredients but not the milk. add the wet ingredients to the dry ingredients and stir together, stir in a tbsp of milk if the mixture is to dry then place the mixture in the baking tray and put in the centre of the oven for 25 minutes, leave to cool for 20 minutes in the tray, then cut up and enjoy
